Claude Rajotte, se décrit comme un "entraîneur" de brasseurs. Il aide les bons brasseurs à devenir de meilleurs brasseurs.
Ce livre, qui s'adresse autant au brasseur-maison qu'au micro-brasseur, n'a pas d'égal, que ce soit pour la qualité de l'information que pour l'approche de l'auteur. M. Rajotte sait mieux que quiconque comment structurer et décortiquer les étapes qui peuvent effrayer un débutant, pour en faire quelque chose de simple à comprendre et à maîtriser. Les illustrations, les manipulations simples, et la pratique ne pourront que vous aider à brasser une bière à laquelle vous n'aviez encore jamais rêvé.
Je ne connaissais moi-même que les principes de base dans le domaine de la culture des levures et j'ai eu un grand plaisir à lire FIRST STEPS IN YEAST CULTURE d'une couverture à l'autre.
